Recipes for My Brain

So these recipes aren't actualy for your brain. (You know like fish or something to make you smarter.) Nope, these recipes are just the opposite. They make you dumb.

Ooops, I mean anyone can make them. They are that easy!

These recipes are especially good for this stay at home mama when her brain is fried. Like today. I used what was left of my brain cells yesterday pondering and praying. Oh, and I had to rush Andrew to the doctor's office at 3pm because he was running 103 fever. Sinus infection, bottle of antibiotics, and two and a half hours later, it was time for dinner! So I relied on a new staple recipe that I found in.....the church cookbook. Of course!

I like these recipes because they require only a few ingredients that I usually keep on hand.

Chicken in Sauce: pg. 107
2 fryers, cut up*
1 large bottle of Durkee's dressing**
1 stick of butter
Juice of 4 or 5 lemons (lemon juice works fine)

Sprinkle paprika on chicken, then pour sauce (mixture of Durkee's, butter, and lemon juice) over chicken; let stand about 30 minutes. Put into oven and bake at 350 until tender (about 1 hour), then turn unit higher to brown. Cook rice and after taking up the chicken add rice to the sauce.
* I had to ask my mom what a "fryer" was when I first made this! However, I have been using chicken leg quarters from Publix because I can get them for .59/lb.....and that is cheap and delicious!
**Also had to ask mama about Durkee's. It can be found on the condiment aisle, around the mustard. It doesn't have a mustard-y taste, though!

Squash Casserole: pg. 29
1 qt. cooked squash ( a little over a pound works)
1 c. mayonnaise
1 can cream of chicken soup
1 small onion
12 saltine crackers ( I use Ritz)
1/4 c. cheese
2 eggs
Garlic Salt (optional)

Cook 30 minutes at 325. ( I mix all ingredients in a bowl first! The cookbook ladies must have left this part out b/c it is too obvious for experienced cooks. But, not too obvious for cooks who have to ask what a "fryer" is!!)

I love the creative name... "Chicken in Sauce" :)! I will definitely be saving this recipe! It's sounds really good and easy!
