This recipe is very easy to assemble, and it makes a ton so you can freeze half for another meal. I got this recipe from my friend, Leslie.
1 lb dry ziti pasta
1 onion, chopped
1 lb lean ground beef
2 (26 oz.) jars spaghetti sauce
6 oz. provolone cheese, sliced
1 1/2 cups sour cream
6 oz. mozzarella cheese, shredded
2 Tbs. grated parmesean cheese
Preheat oven to 350. Cook ziti according to package directions. Brown onion and ground beef. Add spaghetti sauce and simmer 15 minutes. Grease a 9x13 pan and layer as follows:
1/2 ziti, provolone cheese, sour cream, 1/2 sauce mixture, remaining ziti, mozzarella cheese and remaining sauce mixture. Top with grated parmesean cheese. Bake for 30 minutes in preheated oven or until cheeses are melted.
When assembling, I use two pans--one to cook now and one to freeze.
We continue to be busy and are off this Friday to West Point and then to the lake. I love the summer, and I love staying busy. But, somehow, sometimes being busy doesn't quite mix well with the lifestyle of having a baby!!
