This post actually has nothing to do with peace. Although I am in favor of world peace. And I would settle for peace in our nation. Actually, I would really just like some peace at nap time....but, that is another story (and one I am about to conquer!). But I digress.
I made granola. Actually, I made "Groovy Granola" according to the recipe. Why granola, you ask? Because I am pregnant and that is what I want to eat.
Granola and ice water. My current faves.
I have been buying granola and trail mixes to satisfy my taste buds, but then I ran across this recipe and decided to give it a whirl:
Groovy Granola
3 cups old fashioned oats
2 cups chopped pecans
1/2 cup brown sugar
1 tsp. salt
1/4 cup vegetable oil
1/2 cup maple syrup
1/4 cup honey
Combine oats, chopped pecans, brown sugar, and salt. In separate bowl, mix vegetable oil, maple syrup and honey. Add this mixture to the oats mixture. Spread out in a jelly-roll pan and bake for 1 hour and 15 minutes at 250, stirring occasionally.
Raisins or chocolate chips may be added after granola is baked and cooled.
I used pecan syrup from here because I did not have any maple syrup. Also, I didn't have quite 1/4 cup of honey, so I used what I had and then gave an extra dose of the pecan syrup.
Yummy!!
